Some of the best food in Donostia is cooked behind doors you can’t open.
They’re the sociedades gastronómicas — private members’ societies where, for more than a century, locals have gathered to cook and eat together. Only a member can host a meal inside one, so there’s always a member at the table — and becoming a member yourself is another world: you have to be put forward by one, sometimes three, and most societies cap how many they take and keep a waiting list to match. That’s why a visitor almost never sees inside one. With me, you get a seat at that table.
We start at the market to choose what’s best that morning, then cook and share a long Basque lunch inside the society — wine poured, no clock, the way we really do it here. It’s as close to a Donostia home as you’ll get without living in one.

What is a gastronomic society?+
A private members' cooking society — a San Sebastián institution since the 1800s. Only a member can host a meal inside one, and becoming a member takes the recommendation of existing members (sometimes three), with a cap on numbers and a waiting list.
